Bison Burgers



Bison meat is recommended for a heart healthy diet. Bison is high in protein (40+%), iron, minerals, alanine, carnosine, carnitine, creatine (double that of feedlot cattle) and B12. This creature is one of the greatest bodybuilding foods known and definitely one of Cory’s favorites! Bison rocks!

While listing all the benefits IN bison meat, let’s not forget what is NOT IN this fabulous tissue protein. In addition to having fewer calories, less saturated fat and less cholesterol, there are no growth hormones, steroids, or sub-therapeutic antibiotics. Why? Because like Cory, bison cannot be tamed! But these incredibly powerful and hearty animals are environmentally and people friendly. Bison can endure incredible hardship and bizarre weather extremes, making them the King of all Meats for sustainability!

If you are concerned about your health and want to eat food that is good for you – without sacrificing taste and flavor for better nutrition - then bison is the meat for you. Bison is flavorful, tender and packs a nutritional wallop. It tends to satisfy more while eating less.

Bison Burgers

Makes 4 large patties or 6 medium sized patties

This recipe can be doubled or tripled

Ingredients

  • 1 Tbsp of olive oil
  • 1 small chopped onion or 1 cup chopped green onion
  • 2 whole eggs
  • 1 cup cooked, mashed yams
  • 1/4 cup balsamic vinegar or Worcestershire sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons crushed red chilies (optional)
  • 1 lb / 455 g ground bison
  • Sea salt and course black pepper to taste

Directions

  • Heat olive oil over medium heat in a skillet.
  • Cook the onion until soft and golden. Set aside.
  • In a large bowl mix together eggs, cooked mashed yams, balsamic vinegar and spices.
  • Mix the sautéed onion into the raw bison meat with hands.
  • Add the yam mixture to the bison/onion mixture with hands; make sure ingredients are well mixed.
  • Take a handful of the meat and create 4 flat patties.

Grill the patties on each side until the burgers reach desired doneness. Don’t overcook.

Serving suggestion

Serve with large green salad/or colorful veggie plate and Baby Lima Bean Bake.
